Vegetable Salad with Spicy Mustard Dressing

Sticking to greens doesn't have to be boring. This Spicy Mustard Dressing has a tangy kick that sends bland salads to the sideline.

YIELDS

1 salad and 3/4 cup dressing

INGREDIENTS

Spicy Mustard Dressing

  • 2 tablespoons sherry
  • 1 tablespoon creamy spicy brown mustard
  • 1 1/2 teaspoons Worcestershire sauce
  • 2 teaspoons shallots, grated
  • 1 teaspoon Born Sweet Zing™ Zero Calorie Stevia Sweetener
  • dash salt and pepper
  • 1/2 cup extra virgin olive oil

Vegetable Salad

  • 2 cups Romaine lettuce, washed, dried and shredded
  • 1/2 cup broccoli florets
  • 1/4 cup cucumber, thinly sliced
  • 1/2 cup red cabbage, shredded
  • 1/2 cup carrots, shredded
  • 1/4 cup grape tomatoes
  • 1/4 cup walnuts, chopped

INSTRUCTIONS

Spicy Mustard Dressing

In a jar with a tight-fitting lid, mix together all of the ingredients. Add the oil in last, which will keep the dressing blended. Top salad with 2 tablespoons dressing.

Vegetable Salad

Combine all salad ingredients together in a serving bowl. Toss with 2 tablespoons dressing.
