Skinny Ricotta Cheese with Fig Crepe

Made with ricotta cheese and fresh figs, this skinny breakfast captures the taste of winter fruit in a creamy, nutty dish that's easy to make.

INGREDIENTS

Crepes

  • 1 egg
  • 2/3 cup fat-free milk
  • 1 teaspoon vanilla extract
  • 1/2 cup all-purpose flour
  • 1/8 teaspoon salt
  • cooking spray

Filling

  • 6 ripened figs, fresh
  • 1 cup skim milk ricotta cheese
  • 2 tablespoons low-fat cream cheese, softened
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 2 packets Born Sweet Zing™ Organic Stevia Sweetener - Zero Calories
  • 1 teaspoon cornstarch
  • 1/4 cup pignoli nuts

Chocolate Sauce

  • 1 cup cold water
  • 1/4 cup unsweetened cocoa powder
  • 1 teaspoon cornstarch
  • 1 teaspoon vanilla extract
  • 2 packets Born Sweet Zing™ Organic Stevia Sweetener - Zero Calories

INSTRUCTIONS

Crepes

In a large bowl, whisk together egg, milk, and vanilla. In another bowl, sift flour and salt. Add to egg mixture until well blended. Pour batter through a strainer into a bowl, removing any lumps. Cover the bowl with plastic wrap and store batter in the refrigerator for at least 2 hours. The batter can stay in the refrigerator overnight.  

Coat a 6” saucepan with cooking spray, and place over medium heat. Using a 1/4 cup measure, filling just below the edge, pour the batter into the center of the pan and swirl the pan to coat the entire pan bottom. Cook on low heat until the crepe edges begin to brown lightly. Turn crepe out onto a plate or cookie sheet covered in waxed paper, building the stack as you cook each crepe. Be sure to place a piece of waxed paper in between each crepe. The crepes can be refrigerated overnight, covering the plate or sheet pan with plastic wrap.

Filling

Cut half of the figs into pieces.  Set remaining figs aside.  

Add figs, ricotta cheese, cream cheese, vanilla, cinnamon, Born Sweet Zing™ Organic Stevia Sweetener and cornstarch to a blender. Purée the ingredients until smooth. Place the filling into a bowl, cover with plastic wrap and put in the refrigerator until ready to use.

Chocolate Sauce

Put water in a small pot. Sift together cocoa powder and cornstarch and add to the water. Heat on medium until cocoa powder and cornstarch blend together. Stir occasionally until mixture comes to a boil. Boil for I minute.  

Remove from heat and stir in vanilla and Born Sweet Zing™ Organic Stevia Sweetener.    

Store in container in refrigerator until ready to use.  

To build the crepe:  
Spread 3 tablespoons of filling in the middle of the crepe. Slice remaining figs into 1/2-inch slices. Place 3 to 4 slices on top of filling. Fold sides over.  

Drizzle with chocolate syrup and nuts.
