4 (4 ounce) servings
- 2 cups unsweetened almond milk
- 2 cinnamon sticks
- 3 large egg yolks
- 1/8 teaspoon ground nutmeg
- pinch cloves
- 1 tablespoon cornstarch
- 2 teaspoons water
- 3 packets Born Sweet Zing™ Organic Stevia Sweetener - Zero Calories
- 1/2 teaspoon vanilla extract
Heat almond milk and cinnamon sticks in saucepan on stovetop over low heat. When hot, but not boiling, whisk 1 tablespoon of the warm milk into the egg yolks, in a separate bowl, to temper. Add egg yolk mixture to the almond milk in the saucepan and whisk until temperature reaches 160°F. Whisk in the nutmeg and cloves.
In a small bowl, mix cornstarch and water together until well blended. Stir into milk mixture. Heat until mixture begins to thicken. Remove from heat. Remove and discard cinnamon stick.
Add Born Sweet Zing™ and vanilla extract.
Strain mixture into a heatproof container. Cover and chill until ready to serve.
Mixture will keep for 2 days in refrigerator. Stir before serving.
