Pumpkin Pie Bites
- 2 ready-made pie crusts
- 1 (12 oz.) can 2% reduced-fat evaporated milk
- 1 large egg plus 2 egg whites
- 1/2 cup pumpkin purée
- 1/4 cup plus 2 tablespoons Born Sweet Zing™ Baking Blend
- 2 teaspoons pumpkin pie spice
- 1/8 teaspoon salt
Preheat oven to 375°F. Coat mini muffin pans with non-stick spray.
Take pie crust out of the refrigerator; set aside.
In a large bowl, mix together evaporated milk, eggs, pumpkin purée, Born Sweet Zing™ Baking Blend, pumpkin pie spice and salt; set aside.
Roll out pie crust to 1/4-inch thickness. Cut circles with a 2 1/2- to 3-inch circle cutter. Press pie crust into muffin cups. Fill each crust 2/3 full with pumpkin pie mixture.
Bake 20 to 22 minutes.
Cool in pan 5 minutes. Remove each pie bite using an offset spatula. Cool on a wire rack 10 minutes.
Serve warm or store in refrigerator until ready to serve.
