Pancakes with Berry Compote

Pancakes
- 2 cups all-purpose flour 2 cups all-purpose flour

- 1 1/3 cups milk 1 1/3 cups milk
- 1 teaspoon vanilla extract 1 teaspoon vanilla extract
- 2 tablespoons unsalted butter 2 tablespoons unsalted butter
Berry Compote
- 3 cups fresh berries of choice 3 cups fresh berries of choice
- 1 tablespoon cornstarch 1 tablespoon cornstarch
- 2 tablespoons unsweetened cranberry juice 2 tablespoons unsweetened cranberry juice
- 2 packets Born Sweet Zing™ Organic Stevia Sweetener - Zero Calories 2 packets Born Sweet Zing™ Organic Stevia Sweetener - Zero Calories
Instructions
Grease bottom of fry pan and heat over medium heat.
Sift or whisk together in medium bowl all dry ingredients.
In a separate bowl whisk eggs, milk, vanilla, and butter together.
Whisk the dry ingredients together with the wet just until batter is smooth.
Portion 1/4 cup of batter for each pancake and cook 2 minutes or until bubbles break the surface of the unbaked side. Flip and cook until batter is cooked throughout.
While pancakes are cooking, toss all ingredients for Berry Compote, except Zing, together in a medium saucepot. Bring mixture to a boil over medium heat while stirring. Boil 1-2 minutes until sauce is thick and translucent. Stir in Zing; then, hold warm until ready to serve.
