Green Tea Chocolate Chunk Cookies
- 1 cup all-purpose flour
- 1/4 teaspoon baking soda
- 2 tablespoons (level) Matcha green tea powder
- 1/2 cup (1 stick) salted butter, melted
- 1/3 cup Born Sweet Zing™ Baking Blend
- 1 egg, beaten
- 2 teaspoons vanilla extract
- 1/4 cup dark chocolate chunks
In a large mixing bowl, whisk together flour, baking soda and Matcha green tea powder; set aside.
Melt butter in the microwave. Add to mixing bowl along with Born Sweet Zing™ Baking Blend, egg and vanilla extract. Mix until blended. Add flour mixture, 1/4 cup at a time, mixing after each addition. Stir in dark chocolate chunks.
Turn dough out onto a piece of plastic wrap. Roll into a log shape 2 inches round. Wrap in plastic and chill in the refrigerator for at least 30 minutes.
Preheat oven to 350°F. Line a baking sheet with parchment paper.
Cut log into 24 (1/2-inch) discs and place 1-inch apart onto prepared baking sheet.
Bake on middle rack of oven 6 to 8 minutes. Cool in the pan for a few minutes and then move to a wire cooling rack and cool completely.
Store in an airtight container.
