Gingerbread Cookie Bars

Soft and moist like cake, but baked with the familiar taste of gingerbread cookies, these frosted bars are a wonderful twist on a holiday classic.

INGREDIENTS

Gingerbread Cookie Bars

  • 3/4 cup low-fat cream cheese, softened
  • 1/2 cup Born Sweet Zing™ Baking Blend
  • 1 egg
  • 1 tablespoon water
  • 3 tablespoons molasses
  • 1 cup all-purpose flour
  • 1 tablespoon ginger
  • 1 teaspoon cinnamon
  • 1/4 teaspoon cloves
  • 1 teaspoon baking soda
  • 1/8 teaspoon salt
  • 1 cup whole-wheat flour

Cream Cheese Frosting

  • 1 (8 ounce) package low-fat cream cheese, softened
  • 1 teaspoon vanilla
  • 1/4 teaspoon ground ginger
  • 1/2 cup Born Sweet Zing™ Baking Blend

INSTRUCTIONS

Gingerbread Cookie Bars

Preheat oven to 350°F. Coat a 10-1/2 x 15-1/2-inch pan with non-stick spray.  

In a large bowl, mix cream cheese, Born Sweet Zing™ Baking Blend, egg, water and molasses.

In a separate bowl, sift together all-purpose flour, ginger, cinnamon, cloves, baking soda and salt. Add the whole-wheat flour to flour/spice mixture. Stir into the wet ingredients. Mix until dough forms. 

Press dough into prepared  pan. Bake 10 minutes.  

Cool on wire rack. Cut into bars. Store in an airtight container.

Top with cream cheese frosting, if desired.

Cream Cheese Frosting

Cream all of the frosting ingredients together for at least 3 to 4 minutes. Refrigerate until ready to use.
