Apple Cider Donuts

Made with real apple pieces and spiced cider, these fluffy rings taste even better than store-bought.

INGREDIENTS

Apple Topping

  • 1 small apple, peeled, cored and diced
  • 1/4 to 1/2 cup water
  • 1/2 teaspoon cinnamon
  • 1 teaspoon Born Sweet Zing™ Baking Blend

Donuts

  • 1 egg
  • 1 tablespoon canola oil
  • 2 tablespoons plus 2 teaspoons Born Sweet Zing™ Baking Blend
  • 1/3 cup natural apple cider
  • 1/4 cup fat-free milk
  • 1/2 teaspoon vanilla extract
  • 3/4 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • pinch salt
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon cinnamon

Cinnamon Topping

  • 2 teaspoons Born Sweet Zing™ Baking Blend
  • 1/4 teaspoon ground cinnamon

INSTRUCTIONS

Apple Topping

Peel, core and dice the apple into very small cubes. Sauté in pan with water. Heat on medium heat until apples are fork tender, 5 to 7 minutes. Add cinnamon and Born Sweet Zing™ Baking Blend. Remove from heat. 

Donuts

In a medium bowl, mix together egg, oil, Born Sweet Zing™ Baking Blend, apple cider, milk and vanilla.

In a separate bowl, whisk together flour, baking powder, baking soda, salt, nutmeg and cinnamon. Add dry ingredients to the liquid ingredients just until blended.  

Grease mini-donut pan with non-stick spray. Place 1 teaspoon of cooked apple mixture into each donut space. Spoon the batter on top of apple mixture in each donut pan opening.  

Bake 4 to 6 minutes. Remove pan from oven onto a flat cooling rack and allow to cool 3 to 5 minutes. Turn pan over and tap lightly on pan bottom until all donuts are released from the pan. You may have to run a spatula around the edges to release the donuts if they do not pop out of the pan.

Cinnamon Topping

Mix Born Sweet Zing™ Baking Blend and cinnamon together in a small bowl. While donuts are still a bit warm, but not hot, sprinkle the cinnamon mixture on top of each mini donut.

Store any extra mixture in a sealed airtight container.
